Succinic Acid plays an important role in metabolism
Succinic acid is the most prevalent organic acid in the fruit for the majority of its growth. At maturity, however, there was a larger amount of malic acid.

Succinic acid is a non-hygroscopic acidulant with a mild acid strength. Although its apparent taste properties are similar to those of other acidulants of this type, there is evidence that it has a mild flavour build-up, which is advantageous when used as an acidulant in specific foods. It has a much higher solubility in water at room temperature than the other non-deliquescent acids, allowing for greater versatility in powdered food and beverage processing.

Succinic acid is frequently utilised as a pH and acidity regulator in different food production processes in the food and beverage industry. It's also employed in biodegradable solvents and lubricants, adhesives and powder coatings, corrosion inhibition, curing epoxy resins, and as a polymer plasticizer. In agriculture, succinic acid is used as a root stimulator for grapes, as a component in barley seed antismut therapy, as a soil chelating agent, and for speeding and regulating plant growth.
