One such legend is about Lord Vishnu, who took birth on Earth as Lord Parashuram. Hence the day is considered as the birthday of Parashuram, adding significance to Akshaya Tritiya.
Parashuram took birth in a Brahmin family; he was the son of Jamadagni and his wife, Renuka.Even while being a Brahmin, Parashuram took a vow about terminating all the Kshatriyas from the Earth. He was also the one who used his ax, threw it into the ocean, and claimed a piece of land which is now known as Kerala.
The second legend that makes the day important is the descendant of the holy river Ganga. It disbelieved that before being on Earth, Ganga used to reside in heaven or the hair bun of Lord Shiva. It was King Bhagirath who performed severe penance to bring Ganga down to Earth. This is the reason why Ganga is also called "Bhagirathi." This was the day of Akshaya Tritiya, on which Ganga was brought down to Earth.
Taking a bath in the Ganga river on Akshaya Tritiya blesses the individual with more good karma.
This is also the day of Goddess Annapoorna, who is the Goddess of food. She fulfills all living beings' nutritional needs, which is why she is given the utmost importance on Hindusim. When she blesses someone, that person can't go out of food resources all his life.
On the same day, Goddess Annapoorna took birth, and hence she is always worshipped on Akshaya Tritiya. The Goddess is an avatar of Parvathi who makes sure that every creature has food to eat.
There is a tale in South India that depicts Lord Kubera and how he became the Lord of treasure. The legend says that once Kubera worshipped and prayed to Goddess Laxmi for wealth on Akshaya Tritiya day. As a result, Goddess Laxmi bestowed him with never-ending wealth, which made him the keeper and treasure owner. That is the reason why people worship Kubera, too, other than Goddess Laxmi.
The Epic Mahabharata also indicates the significance of Akshaya Tritiya. On the same day, Maharishi Ved Vyas began writing Mahabharata under the guidance of Lord Ganesha. This is also the day on which Yudhishtira received the Akshaya Patra.
When all the Pandavas had to go on an exile, they went out of resources. Meanwhile, Draupadi had to savor food to some sages, and the food was not enough to satisfy the sages. That is where Yudhishtira prayed to the Lord. Krishna appeared the next minute and blessed him with a bowl that was always full of foodstuff.
That is how Draupadi savored the sages' plates with their choice of food and saved herself from a difficult situation.
Once when Draupadi's Cheerharan took place, she cried out and recited the name of Krishna. Lord Krishna blessed her with a cloth that was never-ending. When Duryodhan and his brothers were doing this shameful act, they could not takeout the whole cloth off from Draupadi. This act is also believed to have happened on Akshaya Tritiya.
