The phosphate-bonded modified starch allows the starch to absorb more water while also keeping the ingredients together. By enveloping oil droplets and suspending them in water, Modified Starch acts as an emulsifier in French dressing. The shell of jelly beans is made of acid-treated starch. Oxidized starch makes the batter stickier. Carboxymethylated starches are used in the pharmaceutical industry as a wallpaper adhesive, a textile printing thickener, tablet disintegrants, and excipients. In the paper industry, cationic starch is used as a wet end sizing agent.
