Mannosylerythritol Lipid
The glycolipid class of biosurfactants known as Mannosylerythritol Lipids (MELs) is produced by a variety of yeast and fungus strains and has excellent biochemical and interfacial characteristics. Using an effective screening technique for glycolipid production and taxonomical classification based on ribosomal RNA sequences, MEL-producing fungi were found. The genus Pseudozyma is the only one that produces MEL, and the MEL structures that each species produces vary greatly.
