People with high cholesterol, heart condition, diabetes, and prohibited from drinking cow milk can opt for soy milk.

Recipe 1

Dairy-free muffins

Ingredients

  1. ½ cup or 125 ml of the best soy milk 

  2. 100g dairy milk-free margarine

  3. 1 cup or 215 g caster sugar

  4. 2 eggs

  5. 2 cups or 300g of plain flour

  6. 2 teaspoon baking powder

  7. 1 teaspoon vanilla extract

  8. 2 cups or 250g mixed fresh berries

Preparation

Step 1: Preheat the baking oven to 180°C

Take 36 mini muffin pans with 30 ml capacity, with paper cases.

Step 2: Take margarine and sugar in a bowl and beat it with a wooden spoon until adequately combined. Add only one egg at a time and continue beating the mixture.

Step 3: Place a sieve in the bowl, and pour in the flour and baking soda. Combine them with the mixture, add milk and vanilla extract and keep stirring until mixed properly. Add the berries and fold them gently.

Step 4: Pour the mixture onto the lined pans and bake it for 15 minutes. Try to insert skewers and check if they come out clean. Your muffins are ready to cool down and serve.

Cherry Yogurt Soy Shake

Ingredients

  1. 1 cup of soy milk

  2. 175g vanilla soy yogurt

  3. 1 cup frozen cherries

  4. 2 small scoops of berry sorbet

Preparation

Step 1: Take milk, yogurt, and cherries in a blender, and mix them until there is a smooth texture.

Step 2: Divide the shake into glasses and add some ice cubes.

Dairy-free macaroni and cheese

Ingredients

  1. 250g macaroni pasta

  2. 2 cups of lite soy milk

  3. 250g broccoli (trimmed and cut into small-sized florets)

  4. 2 tablespoons of plain flour

  5. 20g natural, table-spread

  6. 100g soy cheese (grated)

  7. 100g sliced leg ham (diced)

  8. 4 green onions (trimmed and thinly sliced)

  9. Fresh flat-leaf parsley ( to serve)

Preparation

Step 1: Preheat the oven to 180°C

Grease the baking dish (6 cup capacity)

Now, cook the pasta in a saucepan of boiling water with the packet directions. When it turns tender, add the broccoli, cook for 2 minutes, and drain the water.

Step 2: You must melt the table spread in a saucepan over medium flame.

Add flour to it, and stir well for at least 2 mins until it starts bubbling.

Keep adding milk to the mixture, and whisk it constantly until it becomes thick.

Add cheese and season with pepper.

Step 3: Add ham, onion, and sauce to the macaroni, and combine them well. Place this on the baking dish and let it bake for 15-20 minutes until it starts bubbling and turning golden. 

Serve the macaroni with salad leaves and parsley on top.
