Soy Protein is a protein derived from soybeans. It is derived from dehulled and defatted soybean meal. Soybeans that have been dehulled and defatted are processed into three types of high protein commercial products: soy flour, concentrates, and isolates. Since 1959, soy protein isolate has been used in foods for its functional properties. Soy Protein is generally thought to be concentrated in protein bodies, which contain at least 60-70% of total soybean protein. When the soybean germinates, the protein is digested and the amino acids released are transported to seedling growth sites. Soybeans contain a small but growingly important 2S Albumin storage protein.
