Ingredients
1 9 oz. package frozen SeaPak Jumbo Butterfly Shrimp
¾ tsp salt
¼ tsp pepper
1 cup long-grain white rice, uncooked
1 tsp fresh lime zest
1 Tbs fresh lime juice
2 Tbsp chopped fresh cilantro
1 15 oz can of black beans, drained and rinsed
2 cloves minced garlic
¼ cup chicken broth
½ tsp ground cumin
2 avocados, sliced
1 cup queso fresco, crumbled
Tortilla chips
Directions
● Cook rice with ½ tsp of salt according to package instructions.
● When the rice is cooked, fluff with a fork and add lime zest, juice, and chopped cilantro.
● While the rice cooks, bake the shrimp per package instructions.
● In a small saucepan, combine the garlic, black beans, broth, cumin, and ¼ tsp of salt and pepper. And simmer for 10 minutes.
● To serve, divide the cooked rice evenly between 4 bowls. Top with cooked shrimp, black beans, sliced avocado, queso fresco, and tortilla chips on the side.
Shrimp Scampi Tacos
Frozen shrimp scampi is a simple and flavorful shortcut to achieving mouthwatering shrimp tacos with very little fuss.
Ingredients
1 12 oz package frozen SeaPak Shrimp Scampi
2 cups prepared white rice, still warm
Zest and juice from 2 fresh limes
1/4 cup chopped fresh cilantro
6 small flour tortillas
1 cup chopped iceberg lettuce
1 cup shredded white cheddar cheese
Prepared salsa or pico
Directions
● Cook the shrimp scampi per instructions on the package and keep warm.
● Stir the rice, lime juice, zest, and cilantro in a medium bowl.
● To serve, assemble the tacos in this order: chopped lettuce, lime rice, shrimp scampi, and cheese. Serve with salsa or fresh pico on the side.
