The sodium salt of glutamic acid, a non-essential amino acid, is monosodium glutamate (MSG). MSG can be found in high concentrations in a variety of foods, including seaweed, soy sauce, parmesan cheese, and tomatoes. MSG can be found in a variety of fast-food menu items, particularly chicken dishes. MSG is also included in cheese-flavored chips and crackers, canned soup, quick noodles, and gravy mixes or pre-made gravies, among other commercially packaged foods. MSG is typically considered safe by the Food and Drug Administration (FDA) in the United States, however eating MCG in ordinary food is not. However, excessive use can result in health problems such as headaches, skin rashes, a racing heart, and extreme thirst.
